When you have a craving for fresh Maine lobster, but don’t want to spend the time to break a full lobster down, have a taste of ShopLobster’s frozen claw and knuckle meat! Our claws & knuckles are picked from the shell, vacuum-sealed and flash-frozen to maintain straight-from-the-sea freshness. Sweet, tender, and packed full of flavor, our 1-pound bag holds enough meat to make about 4 lobster rolls!
Directions For Use
This raw lobster claw & knuckle meat is High Pressure Processed (HPP) which allows the meat to be extracted TOTALLY RAW! We then vacuum-seal in 1 lb bags and flash freeze.
Allow to thaw overnight in the refrigerator. Gently empty thawed meat into a colander and allow to drain (DO NOT PRESS OR SQUEEZE THE MEAT– this will negatively affect the taste and texture of the finished product). Allow to drain in the colander for a few minutes. It is then ready to cook. Starting with a raw product reduces the risk of overcooking and allows for more flexibility in cooking methods! Whether you choose to sauté with low heat or butter-poach, you’ll know your claws/knuckles are cooked when they are opaque and have reached an internal temperature of 135* – 140* F.
The advantage of our claw and knuckle meat is that it cooks fast at a relatively low temperature. You can quickly saute it in butter or olive oil for a warm lobster roll or salad, or cook it simultaneously with pasta or in a bisque. Please visit our recipe page for some great suggestions!

All of our frozen products are processed in a state-of-the-art HPP processing facility and then flash-frozen in an IQF nitrogen machine. HPP stands for High-Pressure Processing, a cold pasteurization technique, which is extremely effective. It leverages ultra-high-pressure purified water to inactivate bacteria, such as listeria, E. coli, and salmonella. Neutralizing these pathogens allows packaged foods to stay fresh longer.
IQF freezers use liquid nitrogen to freeze small foods that are normally very difficult to freeze well, such as raspberries or seafood. The products are frozen singly rather than in a group, allowing each to keep its individual form, texture and, most importantly, retain its fresh taste.
If you place your order before 11AM, you'll be eligible for next-day shipping. If you order after 11AM, shipping will automatically adjust to the next available date. Also note that in order to preserve the freshness of our products, we do not deliver on Saturday, Sunday or Monday, so please plan ahead!
For some of our customers, Next Day Air and Next Day Air Saver may seem only incrementally different. We include both because in certain locations, Next Day Air Saver is not available.
