When you have a craving for fresh Maine lobster, but don’t want to spend the time to break a full lobster down, have a taste of ShopLobster’s frozen claw and knuckle meat! Our claws & knuckles are picked from the shell, vacuum-sealed and flash-frozen to maintain straight-from-the-sea freshness. Sweet, tender, and packed full of flavor, our 1-pound bag holds enough meat to make about 4 lobster rolls!
Directions For Use
This raw lobster claw & knuckle meat is High Pressure Processed (HPP) which allows the meat to be extracted TOTALLY RAW! We then vacuum-seal in 1 lb bags and flash freeze.
Allow to thaw overnight in the refrigerator. Gently empty thawed meat into a colander and allow to drain (DO NOT PRESS OR SQUEEZE THE MEAT– this will negatively affect the taste and texture of the finished product). Allow to drain in the colander for a few minutes. It is then ready to cook. Starting with a raw product reduces the risk of overcooking and allows for more flexibility in cooking methods! Whether you choose to sauté with low heat or butter-poach, you’ll know your claws/knuckles are cooked when they are opaque and have reached an internal temperature of 135 – 140 F.
The advantage of our claw and knuckle meat is that it cooks fast at a relatively low temperature. You can quickly saute it in butter or olive oil for a warm lobster roll or salad, or cook it simultaneously with pasta or in a bisque. Please visit our recipe page for some great suggestions!
