On average, it takes 4–5 whole lobsters (around 1.25–1.5 lbs each) to produce 1 pound of picked lobster meat, depending on the mix of tail, claw, and knuckle.
We recommend 6–8 oz of lobster meat per person for a main course, or 4 oz per person if you’re making appetizers, salads, or lobster rolls.
For classic New England-style lobster rolls, plan on 4 oz of lobster meat per roll. A 1 lb pack will make approximately 4 rolls.
