Every lobster tail in your box was harvested from the cold, clean waters off the Maine coast and immediately processed using cutting-edge preservation technology to lock in that straight-from-the-sea flavor.

We use High-Pressure Processing (HPP)—a powerful cold pasteurization method that uses ultra-high water pressure to eliminate harmful bacteria like listeria and E. coli, without any heat or chemicals. This keeps the meat raw but perfectly safe, with its natural texture and sweetness fully intact.

Then we flash-freeze each tail using Individual Quick Freezing (IQF) with liquid nitrogen. This advanced method freezes each tail individually—never in a clump—so you get perfectly preserved flavor, texture, and color in every piece.

Thawing: Place lobster tails in the refrigerator overnight or immerse in cold water for 30-60 minutes until fully thawed.​

Cooking Methods:

Grilling: Preheat grill to medium-high. Brush tails with melted butter, place shell-side down, and grill for 5-6 minutes until meat is opaque.​

Broiling: Preheat broiler. Place tails on a baking sheet, brush with butter, and broil 4-5 inches from heat for 5-6 minutes.​

Baking: Preheat oven to 375°F (190°C). Place tails in a baking dish, add a small amount of water or wine, cover with foil, and bake for 12-15 minutes.​

Serving Tip: Avoid overcooking to maintain tenderness and juiciness.
