Each lobster is about 1.5 lbs (live weight), which yields approximately 5–6 oz of cooked meat per lobster.

• Full Dinner Entrée: 1 lobster per person = 12 servings

• Surf & Turf Pairing: Half lobster (shared) + steak = 24 servings

• Appetizer Portions: Tail or claws served with sides = up to 18 servings

• Keep refrigerated until ready to cook—do not freeze live lobsters.

• Bring a large pot of salted water to a boil (approx. 2–3 tablespoons salt per quart).

• Add live lobsters headfirst; cover and boil for 12–15 minutes depending on size.

• Lobsters are done when shells are bright red and meat is opaque and firm.

• For steaming: cook for 14–18 minutes with 2 inches of water and a tight-fitting lid.

• Serve with melted butter, lemon wedges, and your favorite sides.

All of our frozen products are processed in a state-of-the-art HPP processing facility and then flash-frozen in an IQF nitrogen machine. HPP stands for High-Pressure Processing, a cold pasteurization technique, which is extremely effective. It leverages ultra-high-pressure purified water to inactivate bacteria, such as listeria, E. coli, and salmonella. Neutralizing these pathogens allows packaged foods to stay fresh longer.

IQF freezers use liquid nitrogen to freeze small foods that are normally very difficult to freeze well, such as raspberries or seafood. The products are frozen singly rather than in a group, allowing each to keep its individual form, texture and, most importantly, retain its fresh taste.

If you place your order before 11AM, you'll be eligible for next-day shipping. If you order after 11AM, shipping will automatically adjust to the next available date. Also note that in order to preserve the freshness of our products, we do not deliver on Saturday, Sunday or Monday, so please plan ahead!
