Our tails are sustainably harvested off the coast of Maine, flash-frozen within hours of catch to lock in that signature buttery flavor and firm texture. Each tail undergoes High-Pressure Processing (HPP) to ensure safety while keeping the meat raw and tender. Then we freeze them using IQF (Individual Quick Freezing) to avoid clumping and prevent freezer burn.

Main Entrée: ~1 tail per person (30 servings per box)

Surf & Turf: ~½ tail per person (60 servings per box)

Lobster Rolls or Salads: ~½ tail per roll or serving (60 servings per box)

Thawing: Place lobster tails in the refrigerator overnight or immerse in cold water for 30–60 minutes until fully thawed.​

Cooking Methods:

Grilling: Preheat grill to medium-high. Brush tails with melted butter, place shell-side down, and grill for 6–8 minutes until meat is opaque and slightly charred.​

Broiling: Preheat broiler. Place tails on a baking sheet, split-shell facing up, brush with butter, and broil 4–5 inches from heat for 6–7 minutes.​

Baking: Preheat oven to 375°F (190°C). Place tails in a baking dish with a splash of water, white wine, or lemon juice. Cover with foil and bake for 15–18 minutes.​

Serving Tip: These mid-size tails are a crowd favorite. Avoid overcooking to keep the meat juicy and flavorful.
