We use High-Pressure Processing (HPP)—a powerful cold pasteurization method that uses ultra-high water pressure to eliminate harmful bacteria like listeria and E. coli, without any heat or chemicals. This keeps the meat raw but perfectly safe, with its natural texture and sweetness fully intact.
Then we flash-freeze each tail using Individual Quick Freezing (IQF) with liquid nitrogen. This advanced method freezes each tail individually—never in a clump—so you get perfectly preserved flavor, texture, and color in every piece.
